Vegetable Upma
Vegetable upma is a good and nutritious supply as a morning breakfast or a mid day snack. It is not very spicy dish and if you prefer to make it spicy, then increase the quantity of chilies.
Ingredients we will require to make this recipe:
Peas (mattar) : frozen or fresh : 3/4 cup
Carrot (gajar) : . . . . . . . . . . . . . . . two
French beans : . . . . . . . . . . . 100 grams
Semolina (rava) : . . . . . . . . . . . 3/4 cup
Black gram (urad dal) : . . . 1 table spoon
Onion (pyaj) : . . . . . . . . . . . . small - half
Green chilies (hari mirchi) : . . . . . . 2 to 3
Ginger paste (adrak) : . . 1/2 tea spoon
Curry leaves (kadi patta) : . . . . . 10 to 12
Fried ground nut (mung phali) : 1 table spoon
Oil (tel) : . . . . . . . . . . . . 2 table spoon
Coriander leaves (hara dhania)
Salt (namak) to taste
Cut carrots and french beans to small pieces and boil them with peas and little salt in water. Heat oil in a pan and fry finely chopped onion and black gram for a minute. Add ginger paste, finely cut green chilies and curry leaves and fry for another minute. Now add semolina and cook it for two to three minutes. Add boiled vegetables and salt (to taste - vegetables are boiled with salt) and saute for a minute and then add fried ground nut and water. Cook it till done.
Garnish vegetable upma with coriander leaves.
