Vegetable pulao - less spicy preparation
Basmati rice : . . . . . . . . . 2 cups
Onion (pyaj) : . . . . . . . . . . . two
Bay leaves : . . . . . . . . . . . two
Cumin seed (jeera) : 3/4 tea spoon
Cinnamon (dalchini) : . . . . . 1 inch
Clove (lavang) : . . . . . . . . . 3 to 5
Carrot (gajar) : (medium) . . . . two
French beans : . . . . . 100 grams
Peas (mattar) : . . . . . . . 3/4 cup
Oil or ghee : . . 2 table spoon
Salt (namak) to taste
Fry chopped onion in oil till pinkish brown. Add cumin seed, cinnamon, clove and bay leaf and cook for a minute. Add chopped carrots, french beans and pre-boiled peas. Cook for five minutes and then mix rice. Add salt and cook it for a minute and then add 3 cups of water and cook till rice is done.

Red capsicum (simla mirchi) : . . . one
Black pepper (mari) : . . 1 tea spoon
Whole red chili (lal mirchi) : . . . 4 to 5
Cinnamon (dalchini) : . . . . . . . . 1 inch
Clove (lavang) : . . . . . . . . . . . 3 to 5
Carrot (gajar) : (medium) . . . . . two
French beans : . . . . . . 100 grams
Peas (mattar) : . . . . . . . . . . 3/4 cup
Oil or ghee : . . 4 table spoon
Salt (namak) to taste
Fry chopped onion in oil till pinkish brown. Add whole red chilies (break it in to half), black pepper, cumin seed, cinnamon, clove and bay leaf and cook for a minute. Add chopped carrots, french beans, chopped red capsicum and pre-boiled peas. Cook for five minutes and then mix rice. Add salt and cook it for a minute and then add 3 cups of water and cook till rice is done.
Tip: You can use pressure cooker, for which, fry everything in a cooker and then add 2 cups of water and cook it for 3 to 5 minutes.
Quantity of water and cooking time depends on the nature and quality of rice.
