Ragda Pattice





Ragda pattice is a fried potato cutlets served with cooked chickpeas. This is very popular snack, full of protein, carbohydrates and oil, taken during mid day break. This preparation is not very spicy so adjust the quantity of chilies as per your taste.

Ingredients we will need to make this dish:

for Ragda

Chickpeas (kabuli chana) : . . . . . . 1 cup

Onion (pyaj) : . . . . . . . . . (medium) one

Ginger paste (adrak) : . . .1/2 table spoon

Garlic paste (lasoon) : . . .1/2 table spoon

Curd (dahi) : . . . . . . . . . . . . . . 1/4 cup

Red chili powder (lal mirchi) : 2 tea spoon

Cumin seed (jeera) : . . . . . . 1 tea spoon

Turmeric powder (haldi) : . . . 1 tea spoon

Garam masala powder : . . . 1 tea spoon

Baking soda : . . . . . . . . . 1/2 tea spoon

Oil (tel) : . . . . . . . . 3 to 4 table spoon

Salt (namak) as per your taste

for Pattice

Potatoes (aloo) : . . . . . . . . . . . . . 3 to 4

Ginger paste (adrak) : . . . .1/2 table spoon

Garlic paste (lasoon) : . . . .1/2 table spoon

Green chilies (hari mirchi) : . . . . . . 2 to 3

Coriander leaves (hara dhania)

Coriander powder (dhania) : 1 tea spoon

Bread crumbs

Oil (tel) for frying

Method of making Ragda Pattice

Soak chickpeas in water for over night. Add turmeric powder, baking soda and salt and cook it in a pressure cooker for fifteen to twenty minutes. (till chickpeas are soft)

Heat oil in a deep pan and fry finely chopped onion till it is just transparent. Add cumin seed and fry for half a minute and then add ginger paste, garlic paste, red chili powder and garam masala powder. Fry for another half a minute and then add curd and boiled chickpeas. Mix it well and let it cook on a slow flame for ten minutes. Ragda is ready.

Boil potatoes in pressure cooker till done. Peel and mash it. Add ginger paste, garlic paste, finely chopped green chilies, coriander powder and coriander leaves. Add salt and mix it thoroughly to make dough. Make small round balls and make it slightly flat. Cover it with bread crumbs and fry it in a non-stick pan from both side till it is golden brown.

Place pattice in a plate and pour ragda on top of it. Garnish with coriander leaves and chopped onion. Serve ragda pattice with green or tamarind chutney.
