Mutton Do Pyaza
Mutton do pyaza is mutton dish with high calorific value. It is a spicy dish and reduce the quantity of chilies to make it less hot.

Onions (pyaj) : . . . . . . . . . . . . . . . . . . . 3 to 4
Ginger garlic paste (adrak lasoon) : 1 table spoon
Green chili (hari mirchi) : . . . . . . . . . . . . 2 to 3
Red chili powder (lal mirchi) : . . . . . . 1 tea spoon
Coriander powder (dhania) : . . . . . . 1 table spoon
Turmeric powder (haldi) : . . . . . . . 1/2 tea spoon
Cumin seed (jeera) : . . . . . . . . . . . . 1 tea spoon
Pepper corn (kali mirchi) : . . . . . . . . . . . . 4 to 5
Fenugreek powder (methi) : . . . . . . . 1 tea spoon
Garam masala powder : . . . . . . . . . . 1 tea spoon
Bay leaf : . . . . . . . . . . . . . . . . . . . . . . . . one
Curd (dahi) : . . . . . . . . . . . . . . . . . . . . . 1 cup
Oil (tel) : . . . . . . . . . . . . . . . 3 to 5 table spoon
Coriander leaves (hara dhania)
Mint leaves (pudina)
Salt (namak) as per your taste
Marinate mutton with ginger, garlic, red chili powder, turmeric powder, coriander powder and salt for one hour. Add half a cup of water and pressure cook it for ten to fifteen minutes.
Heat oil in a pan and fry chopped onion till just transparent and add cumin seed and slit green chilies. Now fry onion till it is golden brown. Add pepper corn, fenugreek powder, garam masala powder and bay leaf and fry for another minute. Add curd and cook for a minute and then add cooked mutton. Mix it thoroughly and then cook mutton do pyaza on slow flame for ten minutes. Add coriander and mint leaves while serving.
