Mix Vegetable Stew
This mix vegetable stew dish is cooked in goan style, which contains coconut milk. The main ingredient - mix vegetable can have any other combination depending on availability of vegetables. This preparation is spicy so reduce the quantity of chilies as per your taste.

Ivy gourd (tendli) : . . . . . . . . . 100 grams

Capsicum (simla mirchi) : . . . . . 100 grams
Onion (pyaj) : . . . . . . . . . . . . . . . 2 to 3
Tomatoes (tamater) : . . . . . . . . . . 2 to 3
Green chilies (hari mirchi) : . . . . . . . 4 to 6
Ginger (adrak) : . . . . . . . . . . . . . . 1 inch
Red chili powder (lal mirchi) : 1 table spoon
Coriander powder (dhania) : 1 table spoon
Turmeric powder (haldi) : . . . 1 tea spoon
Garam masala powder : . . . 1/2 tea spoon
Curry leaves (kadi patta) : . . . . . 8 to 10
Coconut milk (narial ka dudh) : 2 1/2 cup
Oil (tel) : . . . . . . . . . . . . . . . . 1/2 cup
Salt (namak) as per your taste
Peel potatoes and cut it in small pieces. Take any other four vegetables from above list and cut it in small pieces to make total of 500 grams of vegetable.
Heat oil in a pan and fry finely chopped onion till it is just transparent. Add curry leaves, finely chopped green chilies and finely chopped ginger. Fry it for a minute or minute and a half and then add red chili powder, coriander powder, turmeric powder and garam masala powder. Saute for half a minute and then add chopped tomatoes. Mix it well and add vegetables. Let it cook for two to three minutes and then add coconut milk and salt. Add a cup of water and cook on slow flame till vegetables are done.
Serve Mix vegetable with chapaties or steamed rice.
