Egg Bhurji
Egg bhurji is easy to make quick dish. This dish can be made with bengal gram flour, which is less spicy. Or it can be made without bengal gram flour, which is a spicy hot preparation. So adjust the quantity of chilies as per your taste.
Ingredients you will need to make dish with bengal gram flour:
Eggs (ande) : . . . . . . . . . . . . . . . . six
Bengal gram flour (besan) : 1 table spoon
Ginger paste (adrak) : . . . . 1 table spoon
Onion (pyaj) : . . . . . . . . . . . three to four
Tomatoes (tamater) : . . . . . . two to three
Green chilies (hari mirchi) :. . . . . . 4 to 5
Red chili powder (lal mirchi) : 1/2 tea spoon
Oil (tel) : . . . . . . . . . . 3 to 4 table spoon
Coriander leaves (hara dhania)
Salt (namak) as per your taste
Beat eggs in a bowl with egg beater and add salt.
Take oil in round bottom non stick frying pan and fry finely chopped onion till it is just transparent. Add chopped green chilies and ginger paste and fry for a minute. Add bengal gram flour. finely chopped tomatoes, red chili powder, chopped coriander leaves and little salt. (egg already contains salt) Cook for two to three minutes and then add eggs. Keep scrambling with wooden spatula, so that egg does not stick to the pan. Cook till eggs are done.

Pepper powder (kali mirchi) : 1/2 tea spoon
Oil (tel) : . . . . . . . . . . 6 to 8 table spoon
Coriander leaves (hara dhania)

Add finely chopped tomatoes, red chili powder, chopped coriander leaves and little salt. (egg already contains salt) Cook for two to three minutes and then add eggs.
