Aab Gosht
Aab gosht is mutton with spices. This dish is prepared with whole spices and it is not very rich in calorific value. Depending on your taste, you can increase or decrease the quantity of chilies, as this recipe is slightly hot.
Ingredients we will need to make this dish:
Mutton (gosht) : . . . . . . . . . . 500 grams
Potatoes (aloo) : . . . . . . . . . 150 grams
Ginger (adrak) : . . . . . . . . . . . . . 2" inch
Garlic (lasoon) : . . . . . . . . . . . . 10 to 12
Onion (pyaj) : . . . . . . . . . . (medium) two
Tomatoes (tamater) : . . . . . . . . . . . three
Green chilies (hari mirchi) : . . . . . . . three
Red chili powder (lal mirchi) : 1/2 tea spoon
Pepper powder (kali mirchi) : 1 tea spoon
Cumin seed (jeera) : . . . . . . 1 tea spoon
Turmeric powder (haldi) : . . . 1 tea spoon
Clove (lavang) : . . . . . . . . . . . . . 2 or 3
Cinnamon (dalchini) : . . . . . . . . 1 inch
Kashmiri red chili (lal mirchi) : . . . 2 to 3
Oil (tel) : . . . . . . . . . 3 to 4 table spoon
Coriander leaves (hara dhania)
Salt (namak) as per your taste
Cut mutton in medium small pieces.
Cut ginger in thick pieces.
Heat oil in a pressure cooker and fry cumin seed till it crackles. Add ginger piece, whole garlic, roughly chopped onion, whole green chilies, red pepper powder, black pepper powder, turmeric powder, clove, cinnamon, kashmiri red chilies, roughly chopped tomatoes and salt. Saute for a minute and add mutton. Add two cups of water and then pressure cook it till one whistle.
Peel and cut potatoes. Open cooker after steam is settled and add potatoes. Cook it again in pressure cooker for ten minutes.
Garnish aab gosht with coriander leaves while serving.
